This recipe is a vegetarian soup recipe that Jess would be proud of;) La Vida Veggie baby!
*I made this soup for several swine flu victims and they did not die but instead were revived and thankful for Mirepoix the reverent!
This recipe is easy and it is panacea in a bowl!
2 large white onions(diced small)
3 large carrots(peeled and diced small)
4 celery stalks(diced small)
1/2 stick unsalted butter
3 to 4 quarts swanson vegetable broth
salt and pepa to taste (not the music group...the spices)
In a large soup stock pot add the carrots, celery and le onion, butter, salt and pepa. Cook over medium heat until vegetables fill your home with the aromatic essence, approx. 30 min. Then open the boxes o vegetable broth one by one and add them to le vegetables in ze pot. Simmer over medium heat for an additional 30 to 45 minutes.
Serve with crusty french bread and bon appetit!
Note: The longer you cook le soup the sweeter the onions become.
Note part duex: you can substitute the vegetable broth for chicken broth if you eat animals( not Jess approved)
